F812 Review and Tips

F-Tag 812 (Food Procurement, Store/Prepare/Serve Sanitary) is the most cited F-Tag in Maine currently.   The State Operations Manual (SOM) Appendix PP outlines the requirements for food safety and the proper storage, preparation, distribution, and service of food in nursing homes. This regulation ensures that facilities maintain sanitary conditions in food handling to prevent foodborne illnesses and protect resident health. Nursing homes must store food under safe temperature controls, prevent contamination and cross-contact, and follow federal, state, and local food safety guidelines. Additionally, food and drink must be prepared under hygienic conditions, with staff trained in infection prevention and food handling procedures.

Surveyors assess compliance with F812 by evaluating kitchen and food service areas, observing food storage practices, and ensuring that dietary staff adhere to safe food handling and hygiene protocols. Common violations include improper temperature control, expired or contaminated food, and failure to follow hand hygiene practices.
